Director of Food and Beverage

Job Overview

Summary of Position

At the Maybourne Beverly Hills the Director of Food & Beverage is responsible for assuring 5 Star service is provided at all F&B Outlets to include restaurants, bars, in room dining and banquets while maintaining adherence to budgeted payroll and overhead cost. You would be responsible for continually working towards improving service and sales revenues in all areas to meet or exceed budget. The Director of Food and Beverage is responsible for directing and organizing the activities of the Department to ensure a consistently high-quality service while at the same time developing your team and driving a positive work environment.

Roles and Responsibilities

  • Develop and implement a comprehensive food and beverage strategy aligned with the company's goals and guest preferences.
  • Manage all aspects of the dining operations, including restaurants, bars, in room dining and banquets services.
  • Lead and mentor a team of leaders withing the food and beverage division to maintain a high level of performance, teamwork, and guest satisfaction.
  • Oversee menu planning, development, and pricing to meet customer expectations and financial targets.
  • Collaborate with the senior leadership team to create innovative dining experiences, promotions, and special events.
  • Ensure compliance with food safety, sanitation, and hygiene standards, and liaise with relevant regulatory authorities.
  • Manage relationships with suppliers and negotiate contracts to ensure quality products at competitive prices.
  • Monitor financial performance, analyze sales data, and develop strategies to enhance revenue and control costs.
  • Manage labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the division and hotel.
  • Drive continuous improvement in operational efficiency, service quality, and guest satisfaction.
  • Stay up to date with industry trends and competitive landscape to identify opportunities for differentiation and growth.
  • Communicate with leaders and colleagues to ensure operational needs are met as well as attend regular operational meetings to ensure collective excellence is met between departments.
  • Recruit, interview, hire, and train new leaders in the division.
  • Oversees the daily workflow of the departments.
  • Provides constructive and timely performance evaluations.
  • Handles discipline and termination of colleagues in accordance with company policy.
  • Develops and implements departmental budget.
  • Maintain standards of food and beverage quality and guest service quality.
  • Achieve budgeted revenues and expenses and maximize profitability related to the food and beverage department and participate in the preparation of the annual hotel budget.
  • Assist in preparing local and national sales/marketing programs for food and beverage.
  • Develop short-term and long-term financial and operational plans for the food and beverage department which support the overall objectives of the hotel.
  • Maintain inventory control procedures.
  • Increase the level of guest satisfaction by delivery of an improved product through employee development, job-specific training, and quality of product.
  • Manage in compliance with established company policies and procedures and in compliance with local, state, and federal laws and regulations.
  • Maintain procedures for security of monies and maintains procedures for credit control and handling of financial transactions.
  • Receive departmental-related guest concerns and ensures corrective action is taken.
  • Guide and inspire exceptional team performance and mentor managers, supervisors, and team members in the Food & Beverage Division
  • Build team capability, knowledge, and resources to meet short- and long-term business objectives
  • Mentor, train, and coach team members, oversee new hires and track team training
  • Manage operational coverage, workload, and resource distribution within and across teams
  • Oversee the efforts to ensure service standards are consistently met and exceeded
  • Enhance services and standards for the Food & Beverage Division
  • Accountability for P&L in the Food & Beverage Division
  • Anticipate future guest trends and align services offered in the Food & Beverage Division
  • Develop innovative solutions to enhance communication of guest and service information
  • Must have knowledge of F&B preparation techniques, health department rules, and regulations, liquor laws, and regulations.

Qualifications

  • Bachelor's degree in Hospitality Management, Culinary Arts, Business Administration, or a related field preferred.
  • Proven experience (3-5+ years) in a Executive level F&B role with a luxury hotel brand.
  • Forbes blah blah blah
  • Proven leadership skills with the ability to inspire and motivate teams to achieve exceptional results.
  • Excellent communication, interpersonal, and negotiation skills.
  • Solid understanding of financial management, budgeting, and cost control principles.
  • Creative thinking and a passion for culinary innovation.
  • Knowledge of local and international food and beverage trends.
  • Familiarity with POS systems (Micros Symphony), inventory management, and Microsoft Office Suite.
  • Proven knowledge of California Labor Law, expert with implementation of Tip systems, knowledge with Evention preferred.
  • Ability to work in a fast-paced, dynamic environment and adapt to changing priorities.
  • ServSafe certification or equivalent food safety training is preferred.

Physical Requirements

  • Prolonged periods of sitting at a desk and working on a computer.
  • Prolonged periods of standing.
  • Must be able to lift 15 pounds at times.
  • Physically able to walk and sit for extended periods of time
